I love cookie dough. To an almost gross degree. I may have bought those Tollhouse logs just to enjoy as an ongoing snack. But, alas, cookie dough is packed with sugar & fat and gives me a stomach ache since I can’t control myself. And since today is National Cookie Dough Day & I can’t not celebrate, I am on the quest to find a healthy alternative. I did a pretty good job with my 1 minute healthy cookie dough recipe I posted a few weeks ago but I love to switch it up.
Now along with dough, if you know me, you know I love chickpeas. I roast them, eat them as snacks, add to salads & now I will be using them to create the ultimate healthy cookie dough!
It sounds weird, but I swear this stuff is delicious. Chickpeas give the dough the creamy consistency we would typically expect. All the flavors meld together and create a delicious & sweet treat!
Recipe
— 1 (15-oz.) can unsalted chickpeas, drained, rinsed & patted dry
–1 cup no sugar added peanut butter (or any nut butter of your choice)
–2 TBSP good quality honey (agave can be subbed here)
— 1 TBSP vanilla extract
–1 TSP sea salt
— 1/4 cup low carb chocolate chips, I used Lilly’s Dark Chocolate baking chips (unsweetened baker’s chocolate like this one here is another, less expensive alternative!)
–add-ons (feels free to add in almond slivers, cinnamon & nutmeg, dried fruit or any other healthy yummies)

In a food processor or blender, add in the chickpeas, nut butter & honey – process until smooth. Add in vanilla & salt then process for another 5-10 seconds. Pour mixture into a bowl or just remove the blade & fold in the chocolate chips. Spoon out servings or eat straight from the bowl (no judgements).
Feel like taking it up a notch? Freeze a couple of your portions for about 45 – 60 minutes. While those are freezing, melt dark chocolate. Dip the frozen balls into the melted chocolate & sprinkle with coarse sea salt. So indulgent, but so so good!
