The number one question I get about the Keto diet is the “What if I don’t eat…(insert food allergy or food aversion here)” questions. What if I don’t eat eggs? What if I don’t eat gluten? What if I don’t eat dairy? Can I still do Keto? Of course you can! But allergens, rightfully so, are at the forefront of people’s minds when they start a new diet. I try to help as much as possible but I don’t have the experience or extensive research to help every single person out.

3-WAY MINI CHICKWICHES
Ingredients
4 bone-in chicken thighs, skin on
Pink salt and freshly ground pepper, to taste (this recipe called for grey sea salt but I used my beloved pink salt found here)
3 tablespoons avocado oil mayonnaise
½ cucumber, sliced into coins

Flavor Boosters (Choose One)
{¼ cup chopped fresh cilantro, 2 teaspoons curry powder, 1 teaspoon lime juice}

{¼ cup chopped walnuts, 2 tablespoons chopped fresh parsley, 1 teaspoon lemon juice}

{1 teaspoon paprika, ¼ teaspoon ground cumin, ½ teaspoon dried oregano leaves}

Instructions
Preheat oven to 375F.

Place chicken thighs on a cast iron pan or baking sheet; dust with grey sea salt and pepper. Place in preheated oven and bake for 30-40 minutes, until chicken thighs are cooked. Remove from the oven and let cool completely.

Remove the bone from the chicken thighs and chop the chicken, including the skin, into small pieces. Place thighs in a bowl with mayo and add one pair of flavor boosters to the salad. Toss to combine.Place cucumber coins on the plate and top half with the chicken salad mixture. Top with another coin and serve.

So yum! My fave combo is the cumin and paprika but all three are amazing! I also love this chicken stuffed in lettuce or endive leaves too.

    I just came across your site and got interested in it. I so badly want to eat healthier but the food allergies scare me when wanting to start something new! I’m dealing with a lot of annoying food allergies like to nuts n seafood; so keto won’t work out for me. What are some recommendation! xx Crystal

    1. Hi Crystal, just avoid nuts and seafood! There aren’t any must-haves for Keto, so just eat the Keto foods you enjoy.
