As you may have noticed, I’m a little obsessed with pizza. I make cauliflower crust pizzas at least once a week (try this new recipe here!) and anytime I can pair cheese with sauce and pepperoni, I’m game! These zucchini pizza bites (keto pizza bagel bites as I like to call them) are super simple to make and you most likely will have al the ingredients on hand already.

Keto Pizza Bites

2 large zucchini, sliced into 1/4″ rounds
1/4 cup marinara sauce, my fave is Rao’s
1/4 cup shredded mozzarella
1/4 cup shredded parmesan
1/3 cup mini pepperoni
Dried Italian seasoning
Extra-virgin olive oil
Pink Salt & cracked pepper

What To Do:
Preheat oven to 450 degrees.

Line the cut zucchini up on a baking pan that has either been sprayed or lined with parchment paper. Brush or lightly drizzle with olive oil then seasoning with Italian seasoning, salt & pepper. Spoon a little sauce onto each round. Top with each of the cheese then a couple of pepperonis.

Cook for about 10 minutes or until the cheese bubbles and the pepperonis crisp. This will be quick so keep an eye on them!

If I’m extra hungry, I like to serve these with my best ever bread toasted and buttered. Enjoy!
