Keto Cheesy Bacon Ranch Bake

What You’ll Need:
2 boneless, skinless chicken breasts (about 10 ounces)
2 cups broccoli florets (I also use the stalks)
2 cups cauliflower florets (I also use the stalks)
½ lb bacon
2 ½ cups sharp cheddar cheese, shredded
1 packet Hidden Valley® Bacon Ranch Flavored Dips Mix
2 tablespoons butter, softened
Pink salt & cracked pepper to taste

What To Do:
Preheat your oven to 375F.
Pan fry bacon until crispy, place on a paper towel to drain. Sprinkle chicken with salt & pepper, fry in bacon fat for about 3 minutes per side. Be sure not to overcook as it will cook a bit in the oven.

While the chicken is cooking, spray the cooking dish you will be using with nonstick spray. Toss the rest of ingredients together (reserve 1/2 cup of cheese to add to the top); break up bacon and add to the mixture as well.  Once chicken has cooked and cooled, cut into chunks and add to the mixture. Give everything a good stir and pour into your baking dish; top with remaining cheese.

Bake for 15-20 minutes, making sure the cheese does not burn. Take out of the oven and let rest for about 5 minutes. Enjoy!
*Note: this recipe allows for more al dente veggies. If you prefer them softer, give them a quick blanche or steam before adding them to the seasoning!

  1. Hi Lauren – this recipe looks amazing – what could I use instead of the dip mix as this is unavailable in Australia

    1. Hi Tracy, this is basically what’s in the dip mix:
      2 tablespoons dried parsley
      1 1/2 teaspoons dried dill
      2 teaspoons garlic powder
      2 teaspoons onion powder
      2 teaspoons dried onion flakes
      1 teaspoon dried chives
