I love my Starbuck’s fix and all their food looks so tempting. You can imagine my excitement when they started carrying ‘low carb keto egg bites’! Like how cool is it that a chain would have something quick and easy and delicious for me to eat! Only when I double checked the macros, to my surprise, these egg bites have carbs and a good amount of them!
My copycat keto egg bites are easy to make, are even more delicious than the store-bought kind, and are only 2 carbs for each.
Keto Egg Bites
What You’ll Need
8 eggs, whisked together
8 slices bacon or 1/2 cup sausage crumbles, cooked & crisped
1/2 cup gruyere cheese (or you fave cheese will work as well), shredded or chopped
1/2 cup fresh spinach, chopped (if you use frozen here, just defrost & drain really well)
Fresh cracked pepper
Oil or ghee, to grease
What To Do:
Preheat your oven to 350F.
Use the oil or ghee to grease your muffin tin, ramekins, or other safe bake dish. This recipe also works well in a small, square 8″ baking dish and then cutting out 4 squares after baking.

Mix the rest of the ingredients together and carefully pour into your baking dish of choice. Bake in your preheated oven for about 20 minutes until the eggs are springy to touch (be careful!) or slightly browned. Feel free to top with a little more cheese here for an extra 3-5 minutes or until the cheese melts. Enjoy or wait until completely cooled and store in a meal prep container for up to 3 days.
Tip: you can easily cut the fat in the recipe and keep it at 2 net carbs! Replace half the eggs with egg whites, the bacon with turkey bacon (or only use 4 slices) and use a little grated parm instead of the Gruyere. It’ll still be delicious and filling but with half the fat and calories!
