Keto fat bombs are small treats that are high in fat and low in carbs (so, literally a fat bomb). These little bombs are awesome when you need something sweet, but also work as a quick breakfast, as a yummy snack, a pre or post workout snack, or really whenever you need something quick & keto throughout the day.
This is a riff off my popular (toot, toot) chocolate chip cookie dough fat bomb recipe. With this new recipe, you get delicious dough, warming cinnamon and a sweet, creamy bite.
Snickerdoodle Cookie Dough Keto Fat Bombs
What You’ll Need
8 oz softened cream cheese, I used Philadelphia Cream Cheese
1/2 cup softened unsalted butter, I used Kerrygold
1/2 cup almond butter, I used Zinke Orchards (nothing but almonds in it!)
1/3 cup low carb sweetener, I used Swerve sweetener
1 tsp vanilla, I used Madagascar Bourbon
1 pinch Pink Sea Salt, I used Sherpa Extra Fine
2 tbsp granulated sweetener, I like this Monk fruit one (Swerve still works here too!)
1 tsp cinnamon, I use this Vietnamese Cinnamon
What To Do
Stir the last two ingredients together in a small bowl; set aside.
With a hand mixer, cream together the first six ingredients until everything is incorporated well and a little fluffy.

Refrigerate for about 20 minutes or until the mixture firms up a bit. Scoop the dough into 20 bite-sized balls and lightly coat in the cinnamon sugar mixture. Place each ball onto parchment paper, freeze for an hour then store them individually in the freezer for easy, on the go snacks! These also store well in the fridge. Enjoy!

I have made these so many times since I discovered this recipe! Absolutely love them. I double the recipe & make smaller balls & freeze them on a cookie sheet and will eat 2 after my supper meal. It’s a yummy treat. I have even shared them with my non keto friends and they, too, love them. I do add a tsp of cinnamon to the cream cheese mixture & it takes a bit more cinnamon and sugar to roll the balls in to coat them but all in all I highly recommend this recipe!
I just made these with almond butter. They are absolutely delicious! I am fighting with myself not to go back to the freezer and wolf down some more.
