These are the spicy Keto snacks of your dreams! Not only do they work well as a grab and go snack, they are perfect in a salad, eaten as a side to your main course or covered in a dollop in marinara sauce for mini Keto pizzas!
Jalapeño Cheese Crisps (Keto Approved)
1 Jalapeño Pepper (large, sliced into 1/4-inch rounds)
2/3 cup Parmigiano Reggiano (shredded or grated)
What To Do
Preheat oven to 400F.
Place jalapeño slices on a baking sheet and cook in the oven for 8 to 10 minutes or until tender. Remove from the oven and cool.
On a parchment lined baking sheet, create piles of shredded cheese (use a tablespoon per pile), keeping them about 2 inches apart. Flatten each pile of cheese into a 2-inch circle and place a roasted jalapeño slice on top.
Place back in the oven and bake for 4 to 6 minutes or until golden brown. Remove from the oven and cool for 5 minutes before transferring to a paper towel lined plate to cool completely before serving. Enjoy!
