This simple yet flavorful whole roasted chicken will have you making this every week for meal prep! Serve with your favorite sides, pull apart for chicken salad, or eat all by itself, this easy chicken will become an instant favorite and classic in your home.
Perfect Roasted Whole Chicken (Keto & Paleo Approved)
Whole Roasting Chicken; 4-6 lbs
1-2 tbsp EVOO
1 tsp pink salt
1/2 tsp fresh cracked black pepper
1 tbsp poultry seasoning (my fave is linked here)
1 bulb of garlic, sliced in half lengthwise
1 lemon, sliced in half
What To Do
Preheat oven to 415ºF.
Stuff chicken with garlic and lemons; place chicken in your roasting pan. Rub the bird with oil, and season generously inside and out with salt, pepper, and poultry seasoning. Tuck the tips of the wings underneath the bird and truss the bird’s legs with twine (optional).
Bake uncovered for about 1 hour & 15 minutes and check to make sure the juices run clear when you pull the leg from the breast; you can also take the internal temp of the bird & have it read 180ºF before removing from the oven. Once the chicken hits 180ºF, remove from oven and let sit for 15 minutes before carving to ensure your chicken stays moist and juicy. Enjoy!
