I love the fall. The changing leaves, sweater weather, and pumpkin everything makes me beyond happy. And I don’t care if that makes me basic, because you’ll be thanking me for this pumpkin spice chia pudding all season long.

Keto Pumpkin Spice Latte Chia Seed Puddings

1/4 cup Chia Seeds (I also like Basil Seeds for this recipe as well)
3/4 cup Unsweetened Cashew Milk (I’ve been loving Malk lately)
1/4 cup Pureed Pumpkin
1/2 tsp Pumpkin Pie Spice
1/8 tsp pink salt
1/4 cup Unsweetened Greek Yogurt (go for full fat here!)
1/4 cup blueberries (optional)

What To Do
In a large bowl, combine the chia seeds with the milk, pumpkin and spices. Mix well, making sure all the seeds are incorporated. Refrigerate for 20 minutes then give the mixture a good stir then refrigerate again for at least 1 hour or overnight to thicken.

Swirl the chia pudding with the greek yogurt and top with berries. Enjoy!

Thank you Lauren, I was able to get my body in ketosis for 5 days and lost 5 pounds, but then I went to a party and wasn’t strong enough to stay on keto, and I live with my sister and she always talks about sweets. I really need to lose 50 lbs. And hope one day I can have the discipline to start again.
