Spicy BBQ Keto Ribs (Keto, Whole30, Paleo)

This keto ribs recipe will have you, your friends, your family and anyone who tries a bite begging for you to make it again and again.

Ingredients
2 racks pork ribs (about 4-6 lbs )
1 jar sugar-free barbecue sauce (my favorite is linked here)
Salt (my favorite is linked here)

Dry Rub
2 tablespoon garlic powder
2 teaspoon cumin
2 tablespoons smoked paprika
2 teaspoons cayenne pepper

Instructions
In a small bowl, mix all of the dry rub ingredients together.

Remove the membrane from the back of the ribs and then rinse and dry the ribs.

Liberally salt both sides of the ribs. Then, liberally spread the dry rub all over the ribs, front and back. Wrap the ribs tightly in foil – at this point you can either store in your refrigerator to marinate (no more than over night) or get ready to cook them. *I usually marinate with the dry rub the morning before I cook them, so about 8 hours.

When ready to cook, preheat oven to 275 degrees and place your ribs on a large baking sheet.

Bake for 3 hours (the ribs should be fork tender, if not cook them a little longer). Open the foil packet and drain any liquid that has formed. Brush on the BBQ sauce and broil for 5 minutes or until the sauce becomes nice and bubbly.

Remove and let the ribs rest 5-10 minutes before cutting. Serves 4-6

  1. If you follow me on Instagram, you know my obsession with my Nespresso Vertuo machine (and my excess buy of all their pumpkin spice cups). I actually bought my Nespresso machine from Amazon because of the deal I got during last year’s Prime Day – the machine came with an aerator so I can foam up cream to put in my coffee and was 30% off. This year the deal is even better with 41% off the Nespresso machine! ProTip: I bought my machine from Amazon, but it makes more sense to purchase the coffee pods from Nespresso’s website (and it still ships in just a couple of days!).

  3. I have been stalking the InstantPot with Airfryer lid price an Amazon waiting for the moment that it would hit a sale price. And boy it has come! This gadget seriously does it all. Now with the air fryer lid, the InstantPot air fries (obviously lol), pressure cooks, sautés, steams, slow cooks, sous vides, warms, roasts, bakes, broil and dehydrates. I mean, come on! I literally just ordered this during the Prime Day sale, and I am so excited for it to arrive – expect A LOT of healthy recipes to be filling the blog very soon!

  4. I use my blender everyday. I make smoothies, nut butters, juices, and more but I hate when I want one serving of something to dirty up the huge blender. I love this Ninja blender because it comes with small, to go cups that you can blend right in with the full power of the blender! This feature is amazing because I know what I’m blending is one serving and I only have to wash one thing.

  5. Working out at home has been a total game changer for me. After saving up for a year, I bought a Peloton in March and it has been so incredible! (add me on the leaderboard: robolikes) Recently, Peloton added classes that used resistance bands and these classes are so good! Andy & Hannah teach them and they are so good and leave you feeling sore. These bands are my favorite because they are much more budget friendly and are so easy to use. I use them whenever I need extra strength workouts added to my bike riding!

  6. Also recently added on the Peloton app are barre classes! These classes are also with Hannah and OMG let me tell you they are so tough! I love adding Bala weights to my wrists and ankles to make the moves even more challenging. These weights are also great to add an arm workout while walking too! I also love a great product that was also a contestant on SharkTank but that’s just a fun factoid for me ;D

  7. I love these workout pants. They are super high waisted & have 3 pockets! They are also super breathable & always stay put during my workouts filled with pilates ab workouts, barre squats, power walks, and spin classes. They also come in a ton of awesome color and lengths and are beyond affordable.

  8. I am an avid meal prepper. I actually really enjoy taking a few hours on a Sunday and cooking up a storm – it’s almost like meditating to me! I love these containers to keep all of my prepped food fresh throughout the week. They are airtight and have never had one of them stain even with soups and sauces.

  9. I love walking. I personally feel it has been instrumental in the positive changes in my body and mind. But it’s not always feasible to get in the amount of steps I want daily. Which lead me to research treadmills. Now, I live in a tiny apartment in New York City so the tread needed to be compact and hopefully something I could shove underneath my bed when necessary. Enter this little folding miracle from GoPlus! This treadmill is exactly what I wanted – it’s small and lets me get in all my steps. It should be noted that I only power walk on it and do not run so definitely look into it more if you are a runner!

6 Months With Peloton: My Favorite Rides and Recommendations (Plus, Workout Schedule)

Out of everything I own, me Peloton is my favorite (and most expensive) purchase. I dedicated a year of my life to saving up for the bike and have not regretted it for a single day.

The only con of the Peloton is my inability to stop talking it about! I love telling people about the amazing instructors, rides that made me cry (in a good way), and how my fitness level has never been higher.

Not mention that I love all aspects of the app, not just the bike. After 6 months I am 296 classes in and I haven’t found a class I didn’t enjoy. I love taking my favorite instructors on long walks, try a new power yoga flow, try a sleep meditation, or even try a barre class.

So now that you know that I love talking about Peloton, let’s dive into my favorite rides and workout recommendations. If you aren’t interested in purchasing a bike or a tread, the Peloton app is still absolutely worth the $12.99 monthly fee. The app comes with all the same classes as the bike like barre, running, stretching, yoga, strength, meditation and more. Like I said above, I love using the app regularly for walking and meditations.

My Favorite Peloton Must-Haves

When I ordered my Peloton, I actually went to Amazon to buy new pedals. Now, there is nothing wrong with Peloton’s pedals, but I knew I wanted SPD clips for my spin shoes that I already owned plus I knew I wanted pedals that had cages on them so my boyfriend and friends could use the bike without commenting to buying shoes.

  • Venzo Fitness SPD Pedals with Toe Clips & Cleats – These pedals are perfect. I had the Peloton delivery guys install them for me (took 2 minutes) and the cages work perfectly. Plus, the clips that many seem to struggle with are easy to clip in and out of. You can get the ones I have here.
  • Supermats Heavy Duty Equipment Mat – Even though I just bought an expensive bike, I still want to save money where possible 😀 Instead of getting the Peloton bike mat, I ordered a similar, heavy duty mat from Amazon for a fraction of the price. You can get the one I have here.
  • Neoprene Dumbbell Hand Weights – Speaking of me being cheap with certain things, the Peloton weights are so expensive! I got a pair of Amazon Basic 5-lb weights on the cheap. You can get the ones I have here.
  • S’well Stainless Steel 17 oz Water Bottle – Love this bottle! It is seriously the prettiest thing I own and is the perfect size to get me through a spin class. You can get the one I have here.
  • TIEM Slipstream – Indoor Cycling Spin Shoe – These might not be for everyone, but I am obsessed with my Times. They are super conformable and perfect for my wide feet. I have found the more narrow shoes actually make me feet go numb mid ride so I knew I needed something different. You can get the ones I have here.
  • Bike Seat Cushion – The Peloton bike seat is not for the faint of heart – that narrow seat hurts your butt like nothing else! I have gotten used to the seat by now but this cushion was a lifesaver during my first few months of riding. You can get the one I have here.

My Favorite Peloton Rides

These are my all-time favorite rides and the ones I always recommend to new riders. They are so fun and challenging with great music and an instructor that keeps you in it to the end. I love an instructor that talks (am I only the one?!) – I find this distracts me from the grueling task at hand and makes me feel like I’m riding with a friend.

  • Robin Arzon’s 30 Minute Lizzo Ride from 8/2/19 – This is my absolute favorite and the first ride I recommend to anyone who asks. It’s a studio ride with a great class who are all so into Robin and the music. The front row is high-fiving and having the best time and Robin is so incredible at hyping both the studio and home riders up! Not to mention the playlist is absolute fire all from our girl, Lizzo.
  • Robin Arzon’s 30 Minute Greatest Showman Ride from 11/16/18 – As someone who had never listened to the Greatest Showman soundtrack before this ride, it turned me into a fan! Robin is passionate about the music and is one of the most inspirational rides I’ve taken.
  • Cody Rigsby’s 30 Minute Britney Spears Ride from 7/15/19 – This one is going to HYPE. YOU. UP! As a Britney Stan, this ride is everything you could want and more. All the hits and Cody is so entertaining during the ride, the 30 minutes flies by and guess what, you’ve just PR’ed!

My Favorite Peloton Strength Classes

I’m all about pairing my cardio routine with regular strength classes.

  • Sam Yo’s 10 Minute Arm Toning from 6/9/20 – I am obsessed with all of Sam’s strength classes. I feel like a lot of people sleep on his classes, but they are a must. He always incorporates boxing punches and jabs which I love and I can always feel his classes the day after.
  • Robin Arzon’s 10 min Arms & Shoulders Strength from 3/30/20 – For just a 10 minute class, the one is an absolute scorcher. Super low impact, but a great muscle builder.
  • Selena Samuela 20 min Full Body Strength from 6/23/20 – This one is SO GOOD. Truly a full body that works as cardio just as much as strength. You’ll definitely feel this one the next day!

My Peloton Workout Schedule

Monday: 20-minute Arms and Shoulders + 20 minute walk
Tuesday: 20-minute ride + 10 minute Core Workout
Wednesday: Active rest day (Stretch, meditate or walk)
Thursday: 15-min tabata ride + 10-min Core Workout
Friday: 20-minute Glute & Legs Strength + 20 minute walk
Saturday: Active Rest Day (Full body stretch, love Chase’s stretch classes)
Sunday: 30 minute low impact ride + 10-min Core Workout

Glowing Skin Super Food Fennel Salad (Keto, Whole30, Paleo)

This lemon fennel salad is filled with healthy fats, fiber and a ton of Vitamins all of which perfectly align to get your skin glowing. Each ingredient was picked to taste incredible but also with purpose.

Walnuts
Walnuts are high in Vitamin E and higher in antioxidants & in Omega-3s than almost any other nut. Because of this, walnuts help fight inflammation in the body and keep your gut healthy. The antioxidants & Omega-3s also play a great role in your skin’s look and texture by strengthening the membranes of skin cells and locking in moisture and nutrients. In addition to keeping your skin beautiful, this also helps to keep out skin damaging toxins for beautiful, glowing skin.

Lemon
Lemons are filled with Vitamin C, citric acid and antioxidants. All of this helps with digestion, gut health, hydration and is rumored to help with collagen restoration! Vitamin C also helps fight off toxins and free radicals from the skin, so in addition to this salad, add a little lemon juice to warm water every day.

Parsley
Love it or hate it, this herb is packed with skin benefits. As another ingredient that is high in Vitamin C, and parsley is said to help in the creation of collagen, which helps to give skin its structure and strength. Parsley also contains compounds that help with digestion and getting rid of bloat which is super important for your gut’s health.

Mint
Like parsley, a little bit of mint can help reduce bloat and assist in smoother digestion. This super herb has potent anti-inflammatory and anti-bacterial properties as well as a high content of salicylic acid, all of which help to calm skin and prevent acne. Mint is also packed with antioxidants which as we know fights against free radicals, leaving you with clearer and youthful skin.

Celery
In the recent years, celery has become the hottest new trendy in juicing. But hey, you can eat it too! In just one talk of celery, you are getting Vitamins C, A, & K, beta carotene, flavonoids, antioxidants, and phytonutrients. So what does that all mean? You are reducing inflammation, supporting digestion which helps your gut health, and protecting yourself against free radicals and toxins – all of which make your skin and insides glow.

Olive Oil
Olive oil is a staple in most diets (including the ever beautiful Mediterranean diet) and for good reason. EVOO is rich in oleic acid which has been proven to reduce inflammation in the body. Olive oil also contains high amounts of Vitamins E&K plus a whole host of powerful antioxidants which help protect against toxins and keep the skin hydrated and glowing.

Zucchini
Zucchini is a delicious and versatile fruit (who knew!) that works well in almost all dishes. It works here as well with its high amount of antioxidants, Vitamin A, Zinc and carotenoids – all of which help improve upon your skin’s look and texture. Zucchini also has a great mix of soluble and insoluble fiber which allows for easy digestion and assisting overall with a healthy gut.

Fennel
Now for the star of the show, fennel! Fennel is packed with skin and health nutrients that help it punch way above its weight. This veggie also contains high amounts of Vitamin C & antioxidants which help fight toxins, reduce inflammation, and create collagen, both creating a youthful skin texture.

Glowing Skin Fennel & Zucchini Salad
Serves 4

Ingredients

  • 1/4 cup fresh lemon juice
  • ½ teaspoon pink salt, plus more to taste
  • A couple of heavy grinds of freshly ground black pepper
  • ¼ cup good extra-virgin olive oil (as Ina Garten would say)
  • 3 large fennel bulbs, greens cut off, first layer peeled off and thinly sliced
  • 3 celery stalks, thinly sliced 
  • 2 zucchini, thinly sliced lengthwise
  • 1 handful roughly chopped parsley leaves
  • 1 handful roughly chopped mint
  • ½ cup walnuts, roughly chopped

How to Make the Salad

  1. Whisk or blend together lemon juice, salt and pepper while slowly drizzling in the oil until it is completely blended in with the other ingredients. Since this is a simple dressing, give it a taste and see if you need any more salt or lemon juice to really make it pop.
  2. In a large bowl, toss the dressing with fennel, zucchini and celery. Fold in parsley and walnuts. If you are looking for an extra depth of flavor and dairy doesn’t disrupt your skin, add a little Parmesan just before serving.

Tips from Someone Who Has Made This a Ton

  • This is my go-to dressing for all of my salads and can be made ahead and stored in the fridge. I’ll toss it into the salad about an hour or so before serving.
  • If you prefer to cook the zucchini and not eat raw, sauté or steam the slices until soft.
