Keto fat bombs are small treats that are high in fat and low in carbs (so, literally a fat bomb). These little bombs are awesome when you need something sweet, but also work as a quick breakfast, as a yummy snack, a pre or post workout snack, or really whenever you need something quick & keto throughout the day. Rocky Road Keto Fat Bombs

Recipe

8 oz softened cream cheese, I used Philadelphia Cream Cheese 1/2 cup softened unsalted butter, I used Kerrygold 1/2 cup almond butter, I used Zinke Orchards (nothing but almonds in it!) 1/3 cup low carb sweetener, I used Swerve sweetener 1 tsp vanilla, I used Madagascar Bourbon 1 pinch Pink Sea Salt, I used Sherpa Extra Fine 4 oz low carb chocolate chips, I used Lilly’s Dark Chocolate baking chips (unsweetened baker’s chocolate like this one here is another, less expensive alternative!) 2 oz pecans, chopped into small chunks (or your favorite keto friendly nuts or seeds), I love these 1 oz low carb marshmallows (I like these) With a hand mixer, cream together the first six ingredients until everything is incorporated well and a little fluffy. Then with a silicon spatula (or the hand mixer on low) fold in the chocolate chips and nuts. Refrigerate for about 20 minutes or until the mixture firms up a bit. At this point, you can scoop the dough out into 20 servings & keep refrigerated or scoop them onto parchment paper, freeze for an hour then store them individually in the freezer for easy, on the go snacks! Note: I cannot find a good keto marshmallow substitute. If you have a favorite, let me know in the comments below! Update! In the comments below, I got a suggestion for these amazing marshmallows that are only .1 net carbs! If you want to add, fold in at the same time as the chocolate and nuts.   1. These are so good! I love the combo of chocolate and nuts. I do wish there was a marshmallow component but I’ll def be adding these to my weekly snack prep!

  2. Lily’s chocolate chips are kind of pricey for me but I love unsweetened baking chocolate. How do you think these would do if I left out the choc. chips, rolled them into balls after chilling, and then dipped them in melted unsweetened baking chocolate?

    1. Hi Jillian, that would absolutely work! Just make sure the net carbs per serving are around 1-3 and you should be good!

    1. Hi Kenya, you could add some seeds like chia, hemp or pumpkin which won’t affect the net carb count but will add fat!

  3. These are so delicious! Thanks for the recipe. I added Walden Farms Marshmallow Dip to the recipe. If you’re able to find Walden Farms products at your store, all of them are no carb, no calorie.

    1. Hi Becky, I’ve never tried to bake them so not sure how they would turn out since there is no baking soda in the recipe. Let me know if you try though!

  4. Know foods has vanilla marshmallows sweetened with allulose that is keto friendly. They are regular size, but you could cut them into small pieces.

  5. Love these frozen as a snack! I also added 2 eggs then placed in muffin tins lined with cupcake papers. Baked for 20-25 min on 350. They make a great muffin for breakfast or a snack.I like mine best warm

  6. I added 3 tbsp cocoa powder, increased swerve to 1/2, added a bit more salt and omitted marshmallows just because I don’t have them on hand. Yum!
